If you’ve known me for a while you’ll know how much I dream of being one with my kitchen – hand-holding, skipping, the whole nine yards. Sadly, most of the time it’s a touch and go situation, I’m working on it – I will not rest until I master this art!!
Having said that, I don’t fantasize about spending hours in there. No, no. The simpler and cleaner the recipe the more I’m drawn to it. Hey, I’m a busy gal and from what I gather so are you…
Clean Cranberry Oat Cookies - you read right!
Well, I had bananas…
A great source of potassium for replenishing lost electrolytes and rebuilding your tired muscles after a workout. This recipe brings with it the antioxidants from the cranberries and, you’ve got some protein from the oats. Kinda perfect!
So, thanks to Davey Wavey, some razzle dazzle in the kitchen, and 15 minutes later, I had a handful of freshly made cookies coming out of the oven.
(adapted from Davey Wavey’s healthy cookie recipe)
Ingredients:
2 bananas
1 cup rolled oats
handful fresh cranberries
pinch shredded coconut
Directions:
Preheat oven at 350 degrees.
Mash bananas and oats together. Mix in cranberries. Grease cookie sheet with coconut oil.
Dollop cookies onto cookie sheet.
Sprinkle shredded coconut on top.
Bake for 15 minutes.
Voilá! That’s it.
Keep in mind that I made these right before I hit my mat – so you can get an idea of the time lapse. Plus, let me tell you, flowing with the aroma of bananas and cranberries in the air is taking yoga to a completely different level.
