Raw Recipe: Summer Fruity Salad

Even as working adults we still look forward to summer. We anticipate the light clothing, the thoughts of being at the beach (or in some sort of agua), sandwiches for lunch (I do love my sandwiches!), and dinner under the stars. Then the kids arrive, no one told us that summer was all about entertaining them from sunrise to sunset or making sure they get well-fed more than three times a day – si que pueden comer, no? Who really has time to plan meals when all you want to do is enjoy the sun and the outdoors.

A simply delicious thrown together salad it is to the rescue! The best part is that it can be made a day in advance, stored away, and absolutely no cooking – which makes it easy to put together in a jiffy.

Using a few of the best of summer’s natural ingredients, this recipe es alkalizing too.

Summer Fruity Salad

Ingredients:
• 1 cup of mixed greens
• handful of strawberries, chopped
• handful of peaches, chopped
• cucumber, thinly sliced
• 1/2 cup of preferred nut, chopped (optional)

Directions:
Throw all the ingredients together. Set aside.

Fruity Salad Dressing

Ingredients:
• 1 garlic clove
• 1 small shallot, peeled
• 2 lemons, juiced
• 1/4 cup freshly squeezed orange juice
• few drops of liquid stevia (or your sweetener preferido)
• 1/4 cup olive oil (use as little or as much que quieres)

Directions:
Put all ingredients in food processor and mix until well combined.

Pour dressing over salad when ready to eat. The dressing will hold for about a week si lo dejas en la refrigeradora.
