I’ve had the craving of making cookies for the past little while.
I don’t know if it’s the season or the weather, but I just have.
And I couldn’t simply go to the store to buy a box of whatever I could get my hands on because after a few cookies, I just don’t feel right.
Plus, spending time in the kitchen is pretty relaxing to me. Sadly, I don’t do it as often as I should.
I eat gluten but I dabble in gluten-free baking once in a while.
Digging into my cupboards, the only flour I have is gluten-free so I had to make something work or wait another week for my homemade cookies – and that wasn’t going to happen.
2 cups gluten-free flour
3/4 tsp baking soda
1 tsp sea salt
1/2 stick unsalted butter
1/2 cup brown sugar
2 tbp almond milk
1 tsp vanilla extract
1/4 carob powder
1 cup carob chips
Preheat oven at 375 degrees F.
Combine flour, baking soda, and salt.
In separate bowl, mix butter, sugar, almond milk, and vanilla extract.
Add egg and mix well. Add carob powder and carob chips.
Mix all ingredients together.
Roll mixture into small balls. Press fork to flatten.
Bake for 11 minutes.
Pair these up with your favorite black tea and cuddle up with a book or your fave Netflix show!
